Chef Shawn Monroe has been an Executive Chef for over 30 years beginning his culinary career at Cornell University Statler Hotel School and working along side the great chefs Wolfgang Puck, Emeril Lagasse and Daniel Boulud. Chef Shawn proudly showcased his talents for dignitaries and international leaders. Chef Monroe also landed the contract to produce all the meals for Midwest Airlines buy on board program which earned accolades and national mentions in New York Times, CNN and Food and Wine magazine.Monroe moved with his family to San Antonio, Texas in 2008. In Texas, he developed his flair for regional flavors and combined his culinary background to create culturally rich dishes. Chef Shawn sold his private jet catering company in 2019. Monroe stays true to his cooking philosophy; providing the freshest ingredients and most innovative cooking techniques in all situations. “I relish the challenge of providing outstanding meals, whether on the ground or at 30,000 feet.” His 30 plus years of experience has served VP’s, Presidents, Sports Teams and World Dignitaries while receiving honors from prestigious award societies like Conde Nast and Zagat.
